Each fall at I Sodi, owner Rita Sodi’s home in Florence, her gardener gathers the green olives from the trees on her property and has them pressed at the local frantoio. Sodi just received a shipment of the resulting olio nuovo, the aromatic new oil, which she’s showcasing in such classic Tuscan preparations as fett’unta and pinzimonio. Get it while it’s superfresh.
