The olive harvest takes place during the cool days of fall in November, when the green olives of the I Sodi farm are gathered from the trees and brought to a local presser in Tuscany. Despite having to secure an appointment, one may have to wait from the early afternoon until the early morning hours in order to have access to the Molino stone press. We bring a loaf of bread to taste the first press. The small production run yields small containers of one liter that are available the following December.
